豬肝粉及其酵素水解物之化學性質與對非血色質鐵之還原效率朱文全1周繼發11東海大學畜產與生物科技學系(收件日期:95年 5月 20日;接受日期:95年 7月 24日)摘要本試驗旨在自豬肝臟萃製高蛋白之粉末,並期藉酵素水解增加其於水中之溶解度及將三價鐵離子(Fe()還原為二價鐵離子(Fe()之能力,進而作為提高人體對非血質鐵質吸收與利用之食品添加物為目的。自市場購得之新鮮豬肝臟(fresh liver, FL)經製備成乾燥肝粉(dry fresh liver, DFL)、水溶(water -soluble liver powder, WSP)、鹽溶(salt-soluble liver powder, SSP)與不溶性(insoluble liver powder, ISP)肝粉等樣品,再經酵素處理與冷凍乾燥後,分析各樣品之一般組成分、收率、不同pH值下相對溶解度與對Fe()之還原能力。結果顯示,水分以FL為最高;灰分與粗脂肪部DFL含量最高;蛋白質以WSP與經酵素水解之水溶性肝粉(digested WSP, DWSP)含量最高。100g肝臟可製得28.24g之DFL,並萃出WSP、SSP與ISP 分別為 4.62、7.96及15.08g,如經酵素水解後則DWSP與鹽溶性肝粉(digested SSP, DSSP)之收率顯著提高,而不溶性者(digested ISP, DISP)則顯著減少(P0.05)。當以WSP於pH 3.0 之溶解度為100%時,各部分樣品之相對溶解度均於pH 4.05.0時呈現最低,而酵素水解可顯著提高肝粉在水溶液中的相對溶解度約4050%。對Fe()之還原能力以水溶性肝粉WSP最佳,經酵素水解處理則對Fe()還原能力並無助益。關鍵詞:豬肝粉、酵素水解物、非血色質鐵、還原效率Chemical Characteristic and Reductive Ability on Non-heme Iron for Porcine Liver Powder and its HydrolysateWen-Chuan Chu 1 and Chi-Fa Chow 11Department of Animal Science and Biotechnology,Tunghai University, Taichung, Taiwan(Date Received: May 20, 2006; Date Accepted: Jul 24, 2006)AbstractThe purpose of this study was to manufacture high protein powder from porcine liver by enzyme digesting to increase its solubility in water and the reductive ability of ferric iron to improve the absorption of non-heme iron in human body. The fresh porcine liver samples (FL) were bought from traditional market and dried to fresh powder (DFL) .The DFL was extracted by distilled water followed by salt solution and dried to got waster-soluble powder (WSP), salt-soluble powder (SSP) and insoluble powder (ISP), respectively. The DFL was also digested by enzyme to got each fraction of digested powder samples as DWSP, DSSP and DISP, respectively. All dried power were analyzed the general composition, the recovery ratio, the relative solubility in different pH-value and the reductive ability of ferric iron. In result, FL had the highest moisture content (P0.05). Dry fresh liver (DFL) had the highest ash and crude fat content (P0.05). WSP and DWSP were the highest in crude protein (P0.05). From 100 g of FL, 28.24 g, 4.62 g, 7.96 g and 15.08 g of DFL, WSP, SSP and ISP could be extracted, respectively. The recovery ratio of DWSP and DSSP were increased and DISP was decreased significantly (P0.05). When compared the relative solubility of each sample base on the solubility of WSP at pH 3.0, all samples had lowest solubility on pH 4.0-5.0. Each fraction of porcine liver powder treated with enzyme could raise the relative solubility about 40-50% than that without enzyme digested. WSP had the highest ferric iron reductive ability and enzyme treatment would not have any improvable effects .Key words: Porcine liver powder, Hydrolysate, Non-heme iron, Reductive ability
